Glass – Large balloon glass
Garnish – African long pepper, freshly ground
Preparation – Place the ginger, the three types of pepper, cardamom and LAW in a mortar and crush. Fill the balloon glass with plenty of ice and strain the contents of the mortar in. Zest the lemon just above the brim of the glass (to catch the essential oils) and drop the zest into. Lightly clap the basil between your hands to activate the aroma and place it in the glass. Pour in the tonic and gently stir. To serve, grate some African pepper over the drink.
